DOC FARO RASOCOLMO
With its origins dating back to the Mycenaean era (14th century BC), Faro, by the 19th century, found its way to many regions in France, where it was used to enhance the wines of Burgundy and Bordeaux. The name "Faro '' is believed to be derived from the ancient Greek population of the Pharii, who colonized much of the hills of Messina. Ours is the only DOC FARO that eschews barrique aging, instead opting for maturation and refinement solely in stainless steel for a minimum of 12 months.
This production philosophy has been a guiding principle since the beginning, aiming to create a wine that fully expresses the unique qualities of the five vineyards and their terroir. In essence, we strive to produce a pure DOC Faro that has garnered significant success and international acclaim. The choice to age and refine exclusively in stainless steel reflects our commitment to crafting a wine that stands as a testament to the rich heritage and excellence of the Faro appellation.

HISMAEL INZOLIA IGP TERRE SICILIANE
Within our winery, we proudly present Hismael, a white wine crafted from Inzolia grapes nestled at the foothills of Mount Etna. Hismael stands out as one of the rare Inzolia wines cultivated and produced on the slopes of the volcano. Traditionally grown along the coast, Inzolia takes on a new character when planted in volcanic soils, presenting an elegant white wine with distinct mineral notes and delightful hints of florals and fruits.
Harvested in the first ten days of October, the Inzolia grapes undergo a six-month maturation in stainless steel before bottling. This meticulous process results in a wine that not only offers immediate enjoyment but also has the potential for medium-term aging. With its pronounced minerality, Hismael complements dishes with bolder flavors, showcasing its versatility and ability to enhance a wide range of culinary experiences.

"N36" BIANCO MOSSO
Crafted from indigenous white grapes, our "Bianco Mosso" pays tribute to the 36 red roses, a gift to a special woman, symbolizing cherished moments shared together. This lively white wine carries a persistent effervescence and an intense aroma of yellow-fleshed fruit. With its delicacy, it becomes a versatile white wine suitable for pairing with a variety of dishes.

SARQIN BIANCO MOSSO
From Moscato Bianco grapes subjected to a short maceration, we produce this sparkling white wine: the Sarqin (from the ancient name of the Saracens who first introduced these grapes in Sicily). On the nose, it is fruity and aromatic. On the palate, it is dry, slightly acidic, and, on the finish, slightly bitter, with fine and persistent bubbles. It pairs well with desserts, blue cheeses, fish, foie-gras, and sushi.
INZOLIA IGP TERRE SICILIANE BIOLOGICO
The Insolia IGT Terre Siciliane from the Tenuta Rasocolmo winery is a dry white wine that expresses the authenticity and freshness of Sicily through an indigenous grape variety also known as Inzolia. This wine is crafted to enhance the character of the territory and offer a clean, versatile, and well-balanced drink — perfect for the restaurant industry.
The grapes are hand-harvested in small crates during the fourth week of August, at the peak of their aromatic maturity, when freshness and the balance between acidity and sugar reach their optimal point. The winemaking process is particularly careful and delicate: the grapes are vinified under a controlled CO₂ atmosphere and at low temperatures, in order to best preserve the primary aromas and the fruit’s fragrance.
On the nose, the wine opens with fresh, floral aromas, with clear notes of citrus (such as lemon and citron), green apple, Mediterranean herbs, and light hints of almond and dry hay. On the palate, it is lively and savory, with good acidity that supports the sip, making it pleasant and refreshing. The finish is clean, with a typical, subtle almond-like bitterness. Visually, it shows a bright straw-yellow color, sometimes with greenish reflections.

CATARATTO IGP TERRE SICILIANE BIOLOGICO
The Catarratto IGT Terre Siciliane is a white wine made from one of Sicily’s oldest and most representative native grape varieties. The grapes are hand-harvested in small crates during the first week of September, when they reach the ideal balance between freshness and aromatic maturity.
The vinification process is carefully managed to preserve the varietal fragrance: the grapes undergo cold maceration under a controlled CO₂ atmosphere, a technique that allows the extraction of the most delicate aromas while maintaining the grape’s natural characteristics.
On the nose, Catarratto Mediterraneoopens with fruity and floral aromas, featuring notes of white flowers, pear, white peach, and subtle hints of citrus. On the palate, it is fresh, savory, and well-balanced, with a light structure and a clean finish, sometimes marked by a delicate, varietal bitterness. Visually, it shows a pale straw-yellow color with greenish reflections.

Mediterraneo Bianco This blend of native Sicilian grapes, IGT Terre Siciliane, is a white wine that best expresses the richness of the territory and the island’s winemaking tradition. The grapes — carefully selected from typical varieties such as Insolia, Catarratto, and Grillo — are hand-harvested in small crates during the first week of September, at their ideal stage of ripeness.
The vinification is carried out with great care: the grapes undergo cold maceration under a protected CO₂ atmosphere, a process that helps preserve the primary aromas and ensures a fresh, clean aromatic profile.
On the nose, Bianco Mediterraneo presents intense Mediterranean aromas, with notes of white flowers, citrus, white-fleshed fruit, and subtle hints of aromatic herbs. On the palate, it is fresh and well-balanced, with pleasant sapidity and a harmonious finish, sometimes marked by a slight, varietal bitterness typical of Sicilian grapes. PERRICONE IGP TERRE SICILIANE BIOLOGICO
The Perricone IGT Terre Siciliane is a red wine made from one of the most fascinating and recently rediscovered native grape varieties of western Sicily. The grapes are hand-harvested in small crates during the first week of September, at the ideal point of ripeness to preserve both freshness and typicity.
The vinification involves a short fermentation with the skins, a technique that allows for a delicate extraction of color, aromas, and the softest tannins, resulting in an elegant and pleasant profile.
On the nose, it opens with notes of fresh red fruits such as cherry, redcurrant, and pomegranate, followed by light hints of spices and Mediterranean scrub. On the palate, it is fruity, smooth, and well-balanced, with gentle tannins, good freshness, and a clean, slightly savory finish.
Its color is a bright ruby red, with violet reflections in the youngest wines.
It pairs perfectly with cured meats, medium-aged cheeses, pasta dishes with meat sauces, white meats, and typical Mediterranean cuisine. Also ideal as a by-the-glass red, it’s a great choice for those seeking an expressive yet approachable wine.

DOC NERO D'AVOLA BIOLOGICO
The Mediterraneo Nero d’Avola DOC represents one of the most authentic expressions of Sicily’s rich winemaking heritage. Made from carefully selected grapes, hand-harvested in small crates during the first week of September, this wine is the result of a meticulous vinification process that respects the integrity of the raw material.
After harvesting, the grapes are gently destemmed and fermented at controlled temperatures, followed by a long maceration on the skins, which allows for optimal extraction of aromas, color, and structure.
In the glass, it shows a deep ruby-red color with violet reflections. On the nose, it opens with broad and enveloping aromas, dominated by ripe cherry, blackberry, and plum, enriched by elegant spicy and floral notes. On the palate, it is warm, smooth, and well-balanced, with a full structure and silky tannins. The finish is long, with pleasant fruity and spicy echoes that invite another sip.
A versatile wine, it pairs beautifully with rich and flavorful dishes such as red meats, roasts, grilled dishes, cured meats, and aged cheeses, as well as traditional Sicilian recipes like pasta alla Norma or coniglio alla stimpirata.

L’ACQUA DI ARON - IDROMIELE
Idromiele, the oldest beverage in the world, known in ancient Egypt and Magna Graecia, finds its revival in our Acqua di Aron. Following an ancient recipe, it undergoes fermentation in tropical honey water, followed by aging in barriques for at least one year. Enjoy Acqua di Aron chilled after meals, especially with chocolate desserts or dry biscuits, paired with medium-aged cheeses or spicy dishes. It also serves as an excellent base for cocktails.

AEOLUS - GRAPPA
Aeolus, our white grappa obtained from the distillation of the pomace of the Doc Faro Rasocolmo, thanks to the expert hands of the Master Distiller Giovi. The winds that dominate our marine promontory give the name to our grappa: Eolo. Delicate on the palate, with strong floral and fruity aromas. A Sicilian grappa that will not disappoint the most demanding palates.
