DOC FARO RASOCOLMO
With its origins dating back to the Mycenaean era (14th century BC), Faro, by the 19th century, found its way to many regions in France, where it was used to enhance the wines of Burgundy and Bordeaux. The name "Faro '' is believed to be derived from the ancient Greek population of the Pharii, who colonized much of the hills of Messina. Ours is the only DOC FARO that eschews barrique aging, instead opting for maturation and refinement solely in stainless steel for a minimum of 12 months.
This production philosophy has been a guiding principle since the beginning, aiming to create a wine that fully expresses the unique qualities of the five vineyards and their terroir. In essence, we strive to produce a pure DOC Faro that has garnered significant success and international acclaim. The choice to age and refine exclusively in stainless steel reflects our commitment to crafting a wine that stands as a testament to the rich heritage and excellence of the Faro appellation.
HISMAEL INZOLIA IGP TERRE SICILIANE
Within our winery, we proudly present Hismael, a white wine crafted from Inzolia grapes nestled at the foothills of Mount Etna. Hismael stands out as one of the rare Inzolia wines cultivated and produced on the slopes of the volcano. Traditionally grown along the coast, Inzolia takes on a new character when planted in volcanic soils, presenting an elegant white wine with distinct mineral notes and delightful hints of florals and fruits.
Harvested in the first ten days of October, the Inzolia grapes undergo a six-month maturation in stainless steel before bottling. This meticulous process results in a wine that not only offers immediate enjoyment but also has the potential for medium-term aging. With its pronounced minerality, Hismael complements dishes with bolder flavors, showcasing its versatility and ability to enhance a wide range of culinary experiences.
"N36" BIANCO MOSSO
Crafted from indigenous white grapes, our "Bianco Mosso" pays tribute to the 36 red roses, a gift to a special woman, symbolizing cherished moments shared together. This lively white wine carries a persistent effervescence and an intense aroma of yellow-fleshed fruit. With its delicacy, it becomes a versatile white wine suitable for pairing with a variety of dishes.
SARQIN
From Moscato Bianco grapes subjected to a short maceration, we produce this sparkling white wine: the Sarqin (from the ancient name of the Saracens who first introduced these grapes in Sicily). On the nose, it is fruity and aromatic. On the palate, it is dry, slightly acidic, and, on the finish, slightly bitter, with fine and persistent bubbles. It pairs well with desserts, blue cheeses, fish, foie-gras, and sushi.
L’ACQUA DI ARON - IDROMIELE
Idromiele, the oldest beverage in the world, known in ancient Egypt and Magna Graecia, finds its revival in our Acqua di Aron. Following an ancient recipe, it undergoes fermentation in tropical honey water, followed by aging in barriques for at least one year. Enjoy Acqua di Aron chilled after meals, especially with chocolate desserts or dry biscuits, paired with medium-aged cheeses or spicy dishes. It also serves as an excellent base for cocktails.
